CREAMY SAUSAGE, LEEK & GNOCCHI SOUP
On cold winter days, nothing beats an easy, quick, and cozy bowl of soup. This creamy sausage, leek & gnocchi soup comes together fast and tastes like pure comfort. The perfect warm-up meal
Ingredients:
• 2 tbsp olive oil or butter
• 2 Italian sausages
• 1 large leek, sliced
• ½ cup white wine
• 4 cups chicken broth
• 1 cup tomato sauce
• 1 package of Nocca gnocchi
• 1 cup heavy cream
• Salt & pepper
Preparation:
Warm the olive oil in a pot, add the sausage, and cook until browned. Remove the sausage and set aside. Add the leeks directly into the sausage fat and cook until soft. Pour in the white wine to deglaze and let it reduce slightly. Stir in the chicken broth and tomato sauce, then return the sausage to the pot. Bring to a simmer, add the gnocchi and cook until they float. Finish with heavy cream, season, and enjoy warm.
