Creamy chicken Gnocchi soup

Creamy and comforting, this Chicken Gnocchi Soup is perfect for chilly days! With tender chicken and fresh veggies in a rich, velvety broth, it’s a cozy bowl of pure comfort.
Ingredients:
- 1 tablespoon extra virgin olive oil
- ½ white onion, diced
- 1 stalk of celery, chopped
- 3 cloves of garlic, minced
- 2 carrots, shredded
- Thyme, to taste
- 2 boneless, skinless chicken breasts, cooked and shredded
- 4 cups chicken broth
- Salt and pepper, to taste
- 1 bag of NOCCA All Natural gnocchi
- 2 cups half-and-half
- 1 cup fresh spinach
Instructions:
Heat olive oil in a large pot over medium heat. Add onion and garlic, sautéing until onion is translucent. Stir in celery, carrots, and thyme.
Cook for about 3-5 minutes.
Add shredded chicken, chicken broth, salt, and pepper. Bring to a gentle boil, then stir in NOCCA gnocchi. Simmer for 10 minutes.
Stir in half-and-half and spinach, cooking for another 1-2 minutes until spinach softens. Adjust seasoning if needed.
Serve warm and enjoy this cozy, creamy delight!
