We're shaking things up with this super crispy, flavor-packed gnocchi recipe with mushrooms, that's ready in minutes!
Ingredients:
- 4 tbsp extra-virgin olive oil
- 2 cloves garlic
- 8 oz baby bella mushrooms, sliced
- White wine
-1 package Nocca Gnocchi
- Salt and Pepper
- 2 tbsp unsalted butter
- Grated Parmesan
- Fresh basil
.
Instructions:
Heat 3 tablespoons of extra-virgin olive oil in a large skillet over medium-high heat. Add the garlic and cook until light brown and fragrant. Be careful not to burn the garlic, as it will become bitter.
Once the garlic is browned, remove it from the skillet and add the mushrooms. Season with salt and pepper to taste and cook for 8-10 minutes, stirring occasionally. About halfway through the cooking time, add a splash of white wine to the skillet. The wine will deglaze the pan and add flavor to the mushrooms.
Once the mushrooms are cooked and softened, transfer them to a medium bowl and set them aside.
In the same skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add 1 pack of Nocca Gnocchi. Cook the gnocchi, covered and undisturbed, for 2-4 minutes, or until one side is golden brown and crispy. Covering the skillet helps to steam the gnocchi and ensure even cooking.
Add the butter to the skillet with the gnocchi. Cook, stirring, until the butter is melted, and golden brown, about 1-2 minutes. Add the cooked mushrooms back into the skillet with the gnocchi and warm everything through.
Serve the gnocchi with a generous sprinkle of parmesan cheese and fresh basil leaves.
Enjoy your easy and delicious meal!
