This sheet pan gnocchi with roasted vegetables and Italian sausage is an easy, colorful one-pan meal. The gnocchi roast in the oven alongside peppers, broccoli, tomatoes, and sausage, becoming lightly crispy while the vegetables caramelize and release their flavor. It’s a simple, hearty dish that comes together with minimal prep and cleanup.
Ingredients (serves 3–4):
1 bag NOCCA gnocchi
2 bell peppers
1 red onion
½ head of broccoli
12 cherry tomatoes
2 Italian sausages
3–4 tbsp olive oil
Salt, to taste
Instructions:
Preheat the oven to 425°F. While the oven heats, prepare the vegetables. Cut the peppers into large chunks, peel and slice the red onion into thick wedges, and chop half a head of broccoli into bite-size florets. Leave the cherry tomatoes whole. Slice the Italian sausages into thick pieces.
Place the NOCCA gnocchi, the chopped vegetables, and the sausage pieces on a large oiled sheet pan. Drizzle everything with olive oil, sprinkle with salt, and toss everything together directly on the pan so the ingredients are well coated and evenly spread in a single layer.
Roast in the oven for about 25 minutes, stirring once halfway through, until the vegetables are tender and slightly caramelized and the gnocchi are lightly golden on the outside.
Serve hot straight from the pan.
