Pesto Gnocchi with Potatoes & French Beans

Ingredients (Serves Two):

  • Gnocchi Pesto 1 pack

  • French Beans 1 cup (cut in half)

  • Idaho Potatoes 1 potato, medium

  • Basil 1 cup

  • Garlic 1 clove

  • Extra Virgin Olive Oil 4 tbsp

  • Salt

  • Pepper


  1. In a pot, bring 2 quarts of salted water to a boil.

  2. Dice potatoes in 1/2 inch cubes.

  3. Next, wash beans and cut in half. Then, add beans and potatoes to boiling water and cook for 8 minutes.

  4. In another pot, add extra virgin olive oil and garlic (cut very fine). Cook on low heat for 2 minutes.

  5. Then, drain and add potatoes and beans to oil and garlic (keep boiled water for gnocchi). Cook for 6 minutes. Add a little bit of cooking water to the mixture/sauce.

  6. Add gnocchi to the salted boiling water and cook for 2 minutes (or until they all float). Drain well.

  7. Add gnocchi to sauce. Stir for 1 minute.

  8. Last, add grated parmesan cheese and fresh basil leaves on top of gnocchi & sauce.
